Jura Straw wine vinegar
Savagnin, Poulsard, Chardonnay
Method of Manufacture:
According to Louis Pasteur process, slightly adapted.
Straw wine resulting from grapes dried on a bed of straw in fruit crates and then pressed and fermented in oak barrels.
Then aged in oak barrels in the 228 old cellar and final transformation into vinegar for at least 8 months
-visual: Dress dark light amber gold, with ocher and golden shades. Maudlin.
-Olfactif: Round Nose and without graphite aggression, dried fruit, candied fruit and spices.
-Gustatif: Palate with subtle back notes of oriental spices.
10 years and more.
-Foie gras, scampi icing, grilled fish, shellfish.
-It combines perfectly with the The Far East cuisines.

Beautiful deep golden brown yellow dress with soothing light amber reflections.
An old gold record, a relatively strong dye, bright and clear.
Breathtaking first nose of good intensity with fruit compote aromas white flesh, almost cooked, exotic spices, dried fruit and citrus. Persistence is very good on a fine evolution, almost juicy.
Livestock, of course, is marked.
With little fuss 2nd nose opens with a great expression of white plum compote, orange marmalade, dried fig, hot apricot, dried fruit, fresh white pepper, pineapple very ripe and almost touch of coconut.
The final quality of the nose is fine.
A fresh attack, almost tenderness with a sugar that perfectly encapsulates the acidity of the vinegar.
Well, yes, it is indeed a vinegar.
