Duck breast fillet
with Jura's Macvin
Ingredients for 4 people:
2 beautiful fillet of duck stale,
4 fresh figs (in season),
salt,
pepper,
sugar powder,
1½ glass of Macvin du Jura.
Recipe:
Quadriller the skin of the duck breasts with a knife.
To cook the duck skin over high heat until the fat between the skin and the flesh has melted side.
When the skin is well toasted, lightly brown the flesh side.
Meat should be pink heart.
Drain the melted fat and arrange the figs cut in half in the pan.
Sprinkle with brown sugar, add the Macvin and cover.
Leave the Macvin evaporate and serve with fried potatoes sarladaise way.
